Meringues

Made some meringues for pudding last night =D

SIMPLE HOMEMADE ICE BLOCKS FOR A HOT DAY!

So it was a boiling hot day and I felt like making something that would cool me down a bit.....
ice blocks!

So how do you make these?

I basically just whizzed up a smoothie mixture using~ frozen berries, milk, berry youghurt and a few teaspoons of sugar.

Here's how you freeze them~

After that pour the mixture into little ice block containers then put sturdy plastic spoons into it, they wont stand upright at the stage, but don't worry, you can sort that later. Place the ice blocks upright in the freezer. One they're partly set, move the spoons so they're sticking straight up, and if the ice blocks are set enough, they'll stand like that. Then leave the ice blocks in the freezer for a couple more hours or until set.
When getting them out, carefully stick a knife down the side of the ice block moulds and carve them out.

My favorite fudge recipe

This is my favourite fudge recipe found on Hansells.co.nz .
It's a microwave recipe so it's not as difficult as the usual stove top ones.
Just make sure you remember to beat & add the vanilla.


Ingredients:
100g butter (You can soften this if it would be easier for you, but it's not required)
1 cup sugar
1/4cup golden syrup
400g (can) condensed milk (I can only find 397g cans, they're fine to use)
1 tsp vanilla


Method:
(Prepare a lined or sprayed dish)
Mix everything apart from the vanilla together in microwavable bowl.
Cook in the microwave  for 10-12 mins, stirring every 2 mins,
fudge should be ready when bubbled all over surface. (I usually put it in for 10 minutes)
Add vanilla and beat for approx 5 mins until loses it gloss.
Quickly pour into sprayed dish.  (Or lined)
When firm cut into squares (Put into the fridge for faster cooling)
